Impossible Meatloaf

I posted the process of making this meatloaf, using Impossible Foods grounds, on my Instagram story last night and received so many requests for an actual recipe I figured I better get to it! This is sort of a hybrid recipe – I know some people use onion soup mix for their meatloaf. My grandmother, while she made meatloaf probably once a month, never used onion soup mix. She always used ketchup and mustard in hers, so I am used to that flavor profile and wanted to keep that aspect to reflect back to what my grandmother used to do. I don’t like the packets of onion soup mix so I went with the whole foods approach – onion and garlic slow cooked in some vegan butter.

I started by caramelizing two small onions and three garlic cloves (both minced) in some Country Crock Vegan Butter. This processes takes about 15-20 minutes as you cook them slowly, stirring often, over a medium low flame. Once the onions get a nice caramelized color I set them aside to cool slightly

I then put two packs of Impossible Meat into a mixing bowl, add the salt and pepper, nutritional yeast, ketchup, and mustard, and then add the slightly cooled onion/garlic mix. I use my hands to mix these until well combined. I lay out some parchment paper on a quarter sheet pan, and mold the mix into a loaf directly on this. I do not like cooking a meatloaf in an actual loaf pan, this way I can brush the BBQ sauce on most of the loaf. Once in the loaf shape brush the BBQ sauce on the top and all sides. Place in a 350 degree oven for 30 minutes, I spin the pan around after 15 minutes.

The BBQ sauce comes together quickly. Simply place the apricot preserves in a small sauce pan, add the ketchup, maple syrup, apple cider vinegar, garlic powder, onion powder, salt & pepper and simmer on low for about 15 minutes stirring occasionally. The sauce should thicken up slightly – taste and adjust seasoning as needed.

As a side, I make roasted fingerling potatoes in the air fryer. Just because it is the quickest, simplest, and tasty side to make. Of course a perfect side for this would be my Mac and Miso Cheesy, so maybe plan ahead for a tasty combo!

2 Packs Impossible Meat Grounds

2 Small Onions

3 Garlic Cloves

2 Tbsp Vegan Butter

0.25 Cup Nutritional Yeast

1 Tbsp Ketchup

1 Tbsp Mustard

Salt & Pepper to taste

Apricot BBQ Ingredients

0.25 Cup Apricot Preserves

1 Tbsp Ketchup

1 Tbsp Maple Syrup

1 Tbsp Apple Cider Vinegar

1 Tsp Onion Powder

1 Tsp Garlic Powder

Sal & Pepper to Taste
